Traditional flavors remain the favorites of beverage companies introducing new products, but new flavor trends also are on demand.

The Institute of Food Technologists held its annual meeting and food expo in Chicago in July, featuring many flavor, color, sweetener, protein and fortification innovations.

Citrus flavors, such as lemon, lime, grapefruit and orange, whether alone or in combination with other flavors, have consistently remained a favorite of consumers and beverage-makers.
