Adding to its portfolio of Mexican spirits, 3 Badge Beverage Corp. introduced The Bozal Espadin-Barril-Mexicano Ensamble mezcal. The 47 percent alcohol-by-volume spirit blends three agaves in small batches using traditional techniques of mezcaleros. The agave hearts are cooked in earthen pit ovens and later crushed and mased by a stone Tahona wheel, the company says. Open-air fermentation, relying on native yeasts, allows the sugars to ferment naturally before it is purified through a double-distillation process. The mezcal features floral and citrus aromas with an earthy, herbaceous character, it adds. Bozal Espadin-Barril-Mexicano Ensamble is packaged in 750-ml glass bottles that are available in select markets for a suggested retail price of $50.
