Food scientists at Tic Gums Inc. created a new product, Ticaloid GR 5420, as a replacement for guar gum in food and beverages. Guar gum has been less available for producers in the food and beverage industry due to its use in the oil and gas industry, the company says. As a result, the food and beverage industry needs other gums, like Ticaloid GR 5420, that are more readily available but can produce the same food or beverage texture as guar gum, the company says.
The hydrocolloid system of Ticaloid GR 5420 mimics the qualities of guar while using other, more readily available hydrocolloids. Tic Gums recently demonstrated Ticaloid GR 5420’s performance as a guar gum replacement in sweet tea, cornbread and tomato soup at the Prepared Foods R&D Applications Seminar last month in Chicago.
